There are many things I love about Fall, but one of my favorites is the comfort foods that come with the change to the colder weather!  I thought I would share a few of my favorites today:

Chances are, as you are reading this, I have Beef Bourguignon cooking in my slow cooker and filling my house with a wonderful aroma!  I tried this recipe for the first time about a year ago and my family loves it!  Even the kids have 2-3 servings!  We haven’t had it since last winter, so I decided I would cook it again this weekend.  I bought enough to make 4 recipes and will cook one recipe and freeze the other 3.  I LOVE having dinner in my freezer!

A couple of years ago, I was able to travel with my husband to Boston in the Fall.  What a wonderful time to be Boston!  We happened upon Stephanie’s On Newbury and of course had to eat there!  The food was so GOOD!  We ended up eating there twice on that trip.  I loved the “Shepherd’s Pie In a Half Roasted Squash” so much, that I googled to see if by chance I might find a similar recipe.  To my surprise, I found THE recipe!!

If you haven’t ever had Baked Potato Soup, you NEED to!!  This is a recipe that EVERYONE eats!!  I have made it for in-laws, cousins, friends, and usually take it into friends when they are sick or just had surgery.  I always hear the same thing, “That soup really hit the spot!  Can I get the recipe?”  I took a big pot into a friend after she had surgery and she said it was the only thing she ate for 5 days straight (and still talks about it 10 years later)  Here it is:

Baked Potato Soup

4 large potatoes, baked
After cooling, scoop out pulp

2/3 c. butter or margarine
2/3 c. flour
6 c. milk
3/4 tsp. salt
1/2 tsp. pepper
4 green onions chopped
12 slices bacon, cooked and crumbled
1-1/4 cup shredded cheese, divided
1  – 8 oz. carton sour cream

Melt butter, add flour to create a roux, add milk.  Stir constantly until thickens. Add salt, pepper, half of the cheese, and the sour cream, stir until cheese and sour cream are melted and mixed in.  Add potato pulp, cook until heated.

Serve with bacon,  green onions, and remainder of cheese.

    Daaannng. The Shepards pie recipe doesn’t tell us how much meat is needed and sounds so yummy!

      Now that you say that, I remember that. I substituted ground turkey and I think I just used 1 lb.

    Last night, we had one of my favorite comfort foods–turkey soup. I had a turkey carcass in the freezer and simmering it in the afternoon just filled my home with delightful aromas. I’m saving that Baked Potato soup recipe! Sounds yummy!

    The baked potato soup sounds totally scrummy, I’m going to try it (even though its still semi-boiling hot here in Dubai!). I’ll just turn the a/c lower, LOL! Thanks for sharing
